Baking powder does make chicken crispy, but not in the magical way most cooks imagine. It is not a rescue powder for wet skin, and it is not a shortcut that can overpower steam. It works like an amplifier. When the skin is already dry, baking powder can raise surface pH, speed browning, and encourage tiny blisters that harden into crackly texture. When the skin is damp, the same powder mostly dissolves into the surface moisture and loses its advantage.
That difference explains why two trays of chicken can look seasoned the same and still finish with wildly different results. Chicken skin is not just a thin wrapper. It holds water, rendered fat, and connective tissue that all have to change before crispness can happen. Until the surface moisture leaves, the skin cannot get much hotter than water’s boiling point, which is 212°F. That matters because browning and blistering happen above that point, not below it. If the surface is still wet, the oven spends its energy steaming the skin instead of crisping it.
This is why a damp coating behaves so differently from a dry one. On wet skin, baking powder can turn into a slurry. Instead of sitting in a thin, even layer, it gets patchy and diluted. The result is a surface that dries unevenly, browns unevenly, and can even pick up a chalky feel if too much powder is used to compensate.
